Christmas Light Cupcakes

INGREDIENTS

FOR THE CUPCAKE BATTER:

  • ¾ cup all-purpose flour
  • ½ cup cocoa powder
  • 1 cup dark brown sugar
  • 2 eggs
  • 1/3 cup vegetable oil
  • ½ cup buttermilk (or substitute for ½ cup of milk with 1 1/2 teaspoons vinegar or lemon juice, or ½ cup of sour cream)
  • ¼ teaspoon salt
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons pure vanilla extract

FOR FROSTING:

  • 2 cups vanilla whipped cream (or store bought vanilla frosting)
  • ½ cup melted chocolate chips
  • 1 cup M&Ms 

INSTRUCTIONS:

  • Preheat the oven to 350 F or 180 C, and line a cupcake pan with paper liners.
  • In a medium bowl whisk together oil, eggs, buttermilk, and brown sugar, mix until everything is combined and the mixture is smooth. Stir in vanilla extract, mix until well combined.
  • Stir in all-purpose flour, cocoa powder, salt, baking powder, and baking soda. Mix until combined and smooth.
  • Fill each cupcake liner about 2/3 way full.
  • Bake for 15-20 minutes or until the toothpick inserted in the middle comes out clean.
  • Let them cool.
  • Using an open star tip, pipe whipped cream or frosting swirls onto the cupcakes. Let them chill in the refrigerator for 1 hour.
  • Draw a chocolate line around the surface of the frosting with melted chocolate using a small round tip nozzle.
  • Place M&Ms vertically into the side of the cupcakes.

Serve and enjoy!
