Copy Cat Starbucks Pumpkin Muffins recipe

Makes 12 muffins

Ingredients

For the MUFFIN

  • 1 1/2 cups flour
  • 3/4 cup sugar
  • 1/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon pumpkin pie spice
  • 1 1/2 cups pumpkin puree
  • 1/4 cup butter, melted/cooled
  • 1 teaspoon vanilla extract
  • 2 eggs

For the CREAM CHEESE FILLING

  • 4 oz cream cheese, softened
  • 1 teaspoon vanilla extract
  • 3 tablespoon sugar

Optional toppings: slivered almonds, pumpkin seeds or walnuts

Instructions

  1. Preheat oven to 350 F or 177 C
  2. In a bowl combine all of the dry ingredients.
  3. In a separate bowl, combine the (wet ingredients) pumpkin, melted butter, vanilla extract, and eggs.
  4. Add the wet mixture to the dry mixture and stir until just combined.
  5. Fill the muffin liners with batter about 3/4 full using an ice cream scooper.
  6. Now make the cream cheese filling. In a bowl mix cream cheese, sugar and vanilla extract.
  7. Use a piping bag or Ziploc bag with the corner tip cut off and squeeze out even amounts into the center of the muffins. Don’t stress if the frosting sinks a little.
  8. Place the muffin tray into the preheated oven and bake for about 18-20 minutes.
