However, what i like the most is that it’s so easy to make.

The recipe below is for one serving, but you can easily double, triple or quadruple the ingredients if you want to make more for other family members. By storing these overnight oats in a sealed jar, you can also take your breakfast with you to the office, gym, or wherever you need to be first thing in the morning.

Try it!I used almond milk for this version, so it’s a totally vegan breakfast option. These brownie batter overnight oats are also very filling and the monk fruit sweetener means there is no added sugar. You can easily substitute for any other sweetener you prefer; my kids love it with brown sugar, but then it’s not low carb.

  • 1 (pint size) jar with lid
  • ½ cup old fashioned rolled oats
  • ½ cup almond milk (or milk of your choice)
  • ⅛ teaspoon mineral salt
  • 1 to 2 teaspoons monk fruit sweetener (or sweetener of your choice)
  • 2 tablespoons unsweetened cocoa powder
  • ½ teaspoon vanilla extract

  1. Mix all ingredients together in jar and seal tightly. 
  2. Place in the refrigerator overnight.
  3. Eat cold or remove the lid and microwave for about 1 minute to eat warm.
