Canned Salmon Salad-Filled Tomatoes Recipe
Canned salmon salad is a great option when you want a meatless recipe, especially for Lent. It’s not only delicious and easy to make, but healthy, too. This recipe actually looks amazing, because you fill the tomatoes with the salad. You can even make it the main course if served with a side of white rice.
Tomatoes filled with canned salmon salad (8 servings)
Ingredients:
- 8 Campari tomatoes, hollowed out.
- 1 can (big) salmon, drained.
- 3 tablespoons red onion, chopped
- ¼ cup chopped fennel
- 2 tablespoons capers
- 1/3 cup mayonnaise
Instructions:
- Mix all the salmon salad ingredients in a bowl.
- Fill each tomato with the salad. Garnish with fresh fennel.
