Sweet Potato Hummus with Zucchini Chips

Sweet Potato Hummus is a delicious and healthy alternative to traditional hummus. And, it is a great meatless option for lunch or dinner while being brightly colored and packed with vitamins! Zucchini Chips are a great side dish for any occasion. They add some crunchiness to the sweet potatoes while providing many separate nutrients that aid in overall health. So, this makes this easy appetizer a healthy snack choice.

WHAT IS HUMMUS?

Hummus is a dip made from cooked, mashed chickpeas or sweet potatoes like in this recipe and then blended with oil or tahini and your choice of seasonings. And, it is typically served as a dip with pita bread or vegetables. If you enjoy the traditional chickpea hummus I think that you will also enjoy this sweet potato hummus recipe. 

Just a note, if you don’t like traditional chickpea hummus like some of my family because of the texture, then this is the hummus recipe that you are going to want to make. The texture of this potato-based hummus is not as grainy as chickpea hummus. 

ARE ZUCCHINI CHIPS CRUNCHY?

Zucchini Chips are baked in the oven, so they will be crunchy like fried chips.  By cooking zucchini chips in the air fryer or in the oven you are drying out the moisture in the zucchini slices and allowing the chips to gain that perfectly crunchy texture. 

HOW TO CUT A ZUCCHINI FOR CHIPS?

To make chips, slice the zucchini into thin slices. The thinner they are, the crunchier your chips will be! Use a mandolin to get the thinnest cuts on your vegetable. If you are using a mandolin be extra careful as they are very sharp and it’s easy to cut yourself.

CAN I FREEZE SWEET POTATO HUMMUS?

Yes, you can freeze Sweet Potato Hummus in an airtight container for up to two months. To defrost, remove from freezer and set out at room temperature until thawed. Just a note, however, that I do find that sweet potato hummus can slightly change texture once it is thawed. So, if you don’t mind the texture change, it still tastes amazing.

ARE ZUCCHINI CHIPS HEALTHY?

Zucchini Chips are a healthy alternative to traditional chips. They add some crunchiness while providing many separate nutrients that aid in overall health. You could also make chips with other vegetables like carrots, parsnips, turnips, and beets. I personally think that zucchini chips are the best vegetable chips because they get so crispy and have a mild earthy flavor. 

ARE THERE DIFFERENT WAYS TO MAKE HUMMUS?

Hummus can be made in different ways by adding different ingredients to the basic hummus recipe. Some recipes include roasted red peppers, chipotle pepper, or pesto!

HOW LONG CAN I STORE SWEET POTATO HUMMUS AND HOW DO I STORE IT?

Sweet Potato Hummus should be stored in an air-tight container in the refrigerator. You can store it for up to 3 days.

HOW CAN I MAKE LEFTOVER ZUCCHINI CHIPS CRISPY AGAIN?

To make leftover zucchini chips crispy again, heat them in an air fryer at 400 degrees for 2-3 minutes!

Or you can put them in the oven for 5 minutes at 350 degrees. If you want to crisp them up, even more, try increasing the temperature to 400 degrees but watch them closely as they will burn quickly.

IS SWEET POTATO HUMMUS GRITTY?

This recipe for Sweet Potato Hummus will not be gritty at all.  When you blend all the ingredients are blended together before serving, so there is no need to worry about the texture!

SHOULD I SERVE SWEET POTATO HUMMUS WARM OR COLD?

Sweet Potato Hummus is a delicious cold dish. I don’t really suggest serving it warm. You can serve it warm if you prefer it that way.  However, I think it is best served cold and it can be served with veggies or crackers!

But, zucchini Chips are even better when they are warmed up in the oven. They have a wonderful crunchy texture when they are warm and soft when they are room temperature or cold! That doesn’t mean that you can’t eat them cold or at room temperature, because you can! My family just prefers them hot and crispy. 

HOW LONG CAN I STORE LEFTOVER ZUCCHINI CHIPS?

Leftover Zucchini Chips can be kept in an airtight container for up to 3 days. And, in case you don’t already know they will keep best if stored in the refrigerator! Also, leftover zucchini chips are easy to reheat to make them hot and crispy again.

INGREDIENTS

Sweet Potato Hummus

  • sweet potatoes, drained               
  • garlic, minced                           
  • olive oil                                               
  • Salt to taste 
  • lime, juiced 
  • water

  • zucchini, sliced thin
  • olive oil
  • sea salt to taste

HOW TO MAKE SWEET POTATO HUMMUS WITH ZUCCHINI CHIPS

Hummus:

To start, place all hummus ingredients into the food processor and pulse until well combined and smooth and only, add water only if the mixture is too thick

Preheat oven to 250 degrees and line baking sheet with parchment paper. And use a mandoline slicer or knife to cut zucchini into thin even disks. Next, place zucchini discs in lines on the baking sheet and press with a paper towel to remove any moisture

Brush olive on each disc and sprinkle lightly with sea salt. And, then bake for 1 ½ hours until golden brown and crispy
