Ingredients
  

Hummus Ingredients
  • 40 oz can sweet potatoes drained
  • 2 tablespoons garlic minced
  • 1 tablespoon olive oil
  • Salt to taste
  • 1 lime juiced
  • ½ cup water
Zucchini Chips Ingredients
  • 1 large zucchini sliced thin
  • 2 tablespoons olive oil
  • Sea salt and pepper to taste

Equipment

  • baking sheet
  • mandolin or sharp knife
  • parchment paper
  • food processor

Method
 

Hummus Directions
  1. Place all hummus ingredients into food processor and pulse until well combined and smooth
  2. Add water only if mixture is too thick
Zucchini Chips Directions
  1. Preheat oven to 250 degrees and line baking sheet with parchment paper
  2. Use a mandoline slicer or knife to cut zucchini into thin even disks
  3. Place zucchini discs on line baking sheet and press with a paper towel to remove any moisture
  4. Brush olive on each disc and sprinkle lightly with sea salt
  5. Bake for 1 ½ hours until golden brown and crispy
