Easy dinner recipe: gnocchi with pink sauce
I can always count on potato gnocchi with pink sauce when I need the easiest dinner recipe when I’m too tired to cook anything too complicated.
I do use premade potato gnocchi that I get at the supermarket, Amazon or Target, but I know many friends make their own pasta. The great thing about vacuum-sealed gnocchi is that most brands don’t need refrigeration, so you can stock up and keep them in your pantry.
If you’re not a fan of tomato-based sauces, you can always substitute the pink sauce for a white one or a creamy Alfredo (made with parmesan cheese and butter) sauce.
Gnocchi with pink sauce

Ingredients
- 2 small packages pre-made potato gnocchi
- 1/2 cup tomato sauce, puree or ketchup
- 1/2 cup whipping cream
- salt and pepper
- shredded mozzarella cheese
- Optional: fresh basil
Instructions
- Preheat oven to 350 F.
- In a bowl, mix cream and tomato sauce. Add salt and pepper to taste. You can also add a little garlic powder.
- Boil water with a little salt
- Cook gnocchi according to the package instructions. Most brands recommend boiling them for 3-4 minutes until they start floating to the top.
- Remove from heat and drain.
- Transfer gnocchis to oven-safe baking or casserole dish. Pour the pink sauce on top.
- Add shredded mozzarella cheese on top.
- Cover with aluminum foil and bake for 20-30 minutes, until cheese melts.
- Remove from oven, garnish with fresh basil if you like and serve.
Honestly, this is a great last-minute dinner and it’s a crowd-pleaser. I have made it with tomato sauce and other times with ketchup (a bit sweeter), depending on what I have in my pantry and it’s always a huge hit with my kids. Let me know if your family enjoys this easy recipe!
