When I first tried these sugar cookie truffles, I couldn’t believe they’re gluten-free. Even though there are many great cakes and cookies without gluten, sometimes others are less than satisfying. But these no bake sugar cookie bites are beyond delicious. Even better, my entire family can enjoy them.

You will need: low-fat cream cheese, pure maple syrup, vanilla extract, almond flour, white chocolate chips, and coconut oil.

Is almond flour easily found? All the supermarkets close to me carry almond flour. Even Target has it! You can also purchase it online if you prefer.
No Bake Gluten Free Sugar Cookie Bites
Ingredients:
- 4 oz of low-fat cream cheese
- 2 Tbsp pure maple syrup
- 1 tsp vanilla extract,
- 1 + ¼ cup almond flour (GF version)
- 1 cup white chocolate chips
- ½ tsp coconut oil
Instructions:
- In a microwave-safe bowl, melt cream cheese in 15 second increments. Add maple syrup and vanilla. Blend until smooth.
- Slowly add in almond flour and stir to incorporate.
- Using a cookie scooper, scoop evenly sized balls onto a parchment-lined sheet. Let chill for 30 mins
- Remove from the cooler and melt white chocolate.
- Dip balls using a fork. Shake off any extra chocolate.
- Add sprinkles (optional) and place them back on a parchment-lined baking sheet
- Let fully set 15-20 min in the fridge or 30 mins at room temp.
