You only need minimal prepping, clean up is a breeze, and there are no leftovers. That’s why I call this the best sheet pan fajitas recipe!

We’re huge fans of Mexican and Tex-Mex cuisine and my kids will always devour tacos, guacamole or fajitas. They are fun to assemble and so flavorful that you can’t go wrong. These sheet pan fajitas are perfect for Taco Tuesday, Cinco de Mayo or any night you want a delicious meal. If you are on a low carb diet, you can skip the tortillas and just make a bowl out of this recipe. These are the easiest and best sheet pan fajitas you will ever try. Another great gluten-free option? Use chilled iceberg lettuce leaves instead of tortillas to make your own “taco”; my husband loves this and it’s super easy to serve.

Can I just use one sheet pan to make these fajitas?

Yes! You can also make the process even easier combining the chicken and beef with the peppers and onions. If you do cook everything together for 30 minutes, the peppers and onions will be darker than in my pictures, but the result is delicious.

In my family the kids prefer to avoid peppers, so I cook them in a separate sheet pan. If you have picky eaters, like I do, keeping everything separate allows for more options and less complaints. 

Easy Sheet Pan Fajitas

Prep time: 10 min

Bake time: 30 min

Ingredients:

  • 1 lb (450 gr) thin steak, cut into strips
  • 1 lb (450 gr) chicken breast, cut into strips
  • 1 each red, yellow, orange bell pepper – cut into strips
  • 1 onion, sliced thin
  • ½ cup  olive oil
  • ¼ cup lemon juice
  • 1 teaspoon chili powder
  • 1 teaspoon cumin powder
  • ¼ cup lime juice
  • 2 teaspoons chile verde seasoning – or your favorite seasoning mix

For serving:

  • Flour tortillas
  • Shredded cheese
  • Sour cream
  • Guacamole

 

Instructions:

  1. In a small bowl with a lid, whisk together ¼ cup olive oil, lemon juice, chili powder, and cumin until well combinedThese are the easiest and best sheet pan fajitas you will ever try. They're perfect for taco Tuesday, Cinco de Mayo or any night you want a delicious meal.
  2. Stir chicken strips into mixture, coat well and marinate for at least 30 minutes
  3. In a separate bowl with a lid, whisk together ¼ cup olive oil, lime juice and chile verde seasoning until well combinedThese are the easiest and best sheet pan fajitas you will ever try. They're perfect for taco Tuesday, Cinco de Mayo or any night you want a delicious meal.
  4. Stir steak strips into mixture, coat well and marinate for at least 30 minutes
  5. Preheat oven to 400 F or 204 C, line 2 baking sheets with parchment paper
  6. Place chicken and steak on one sheet, divided by paper or foil
  7. Place onions and bell peppers on another sheet
  8. Cook chicken and steak for about 30 minutes or until done
  9. Cook onions and peppers for 15-20 minutes until soft
