A fresh, juicy peach always makes me think of summer. In Chile, where I grew up, nectarines are a staple in the warmer months.

Peaches are rich in vitamin C and fiber, so they are a healthy fruit.

Cupcakes might not be as healthy but they are so perfect for any summer party. When you add peaches to a traditional cupcake recipe, you won’t believe how delicious your treats will come out. Plus, they look adorable.

Makes 14 cupcakes

Peach Cupcake Ingredients

  • 1 2/3 C flour
  • 1/2 C sugar
  • 1/2 C light brown sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp baking soda
  • 1 tsp baking powder
  • 3/4 C unsalted sweet cream butter, softened
  • 3 Large egg whites
  • 2 tsp pure vanilla extract
  • 1/4 C sour cream
  • 1/2 C whole milk
  • 3/4 C diced peaches

Directions

  • Preheat oven to 350 degrees and line a cupcake pan with cupcake liners
  • In a large bowl, whisk together the flour, sugar, cinnamon, baking soda, and baking powder until combined
  • Using another large bowl, beat on medium speed until combined the butter, egg whites, vanilla, sour cream, and milk
  • Fold in the dry ingredients until combined
  • Fold in the diced peaches
  • Scoop batter into liners filling 3/4 way full
  • Bake in the oven for 21 minutes
  • Allow to cool completely

Peach Frosting Recipe

Peach frosting ingredients

  • 1/2 C unsalted sweet cream butter
  • 2 tsp pure vanilla extract
  • 5-7 tbsp heavy whipping cream
  • 5 C powdered sugar
  • 1/4 C finely diced peaches
  • 14 peach slices
  • 1 large piping bag with large star tip
  • 1 bunch of mint sprigs

Directions

  • Using a standing mixer, beat all ingredients except the peaches until combined, smooth and thick
  • Fold in the peaches
  • Scoop frosting into a piping bag
  • Frost cooled cupcakes and top with a peach slice and mint sprig
