Valentine’s Day Snickerdoodle Bars
These delicious Valentine’s Day snickerdoodle bars are such a cute treat.
Whats is a snickerdoodle? It is a type of cookie made with butter or oil, sugar, salt, and flour, and rolled in cinnamon sugar. Think of it like a sugar cookie rolled in cinnamon. Since my kids like these cookies so much, I decided to try to make snickerdoodle bars for them and then added the most delicious cream cheese frosting. Feel free to use the frosting recipe for your favorite cupcakes or carrot cake recipes. The sprinkles can be switched if you are making these treats for birthday parties or any kind of celebration. I added Valentine’s Day sprinkles to celebrate love and friendship.
Valentine’s Day snickerdoodle bars with cream cheese frosting
Ingredients
- ½ C unsalted sweet cream butter, softened
- 1 C sugar
- ½ C light brown sugar
- 2 large eggs
- 1 tsp pure vanilla extract
- 1 tbsp ground cinnamon
- 2 C flour
For the cream cheese frosting
- ½ C unsalted sweet cream butter, softened
- ½ C cream cheese
- 1 tsp pure vanilla extract
- 4 C powdered sugar
- 1 tsp-3 tsp heavy whipping cream
- 1 C Valentine’s Day sprinkles
Instructions
- Preheat oven to 350 F (177 C) and line a 9×13 inch (23 x 33cm) baking dish with a parchment paper
- Using a large bowl, whisk together the flour, and ground cinnamon
- In a large bowl, beat together the butter, sugar, brown sugar, eggs and vanilla until combined
- Gradually beat in the flour and cinnamon until combined
- Spread the dough evenly into the pan
- Bake in the oven for 20-24 minutes or until a toothpick comes out clean
- Allow to cool completely
- To make the cream cheese frosting, using a standing mixer, beat together the butter and cream cheese until combined and smooth
- Beat in the powdered sugar, vanilla, and heavy whipping cream until combined and smooth
- Spread evenly onto the bars and sprinkle some Valentines day sprinkles on top.
- Cut into bars and enjoy!
