The most delicious peanut butter, banana and chocolate chip pancakes recipe

Peanut Butter, Banana and Chocolate Chip Pancakes
Makes 12-15 pancakes
Prep time: 5 minutes
Cook time: 20 minutes
Ingredients:
- 1 ½ cup oat flour
- 1 teaspoon baking soda
- ½ teaspoon cinnamon
- 3 bananas, smashed
- 1 egg
- ½ cup milk
- 1/3 cup brown sugar
- ¼ cup peanut butter
- 2 tablespoons vegetable oil
- 2 teaspoons vanilla
- ½ cup mini chocolate chips
Instructions:
- Preheat a griddle or skillet over medium heat.
- In a large bowl, whisk together the oat flour, baking soda, and cinnamon. Set aside.
- In a separate bowl, mix together the smashed bananas, egg, milk, brown sugar, peanut butter, vegetable oil, and vanilla.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Fold in the chocolate chips.
- Grease the griddle with nonstick cooking spray. Use a ¼ cup to scoop the batter onto the hot griddle. Cook the pancakes until the edges begin to brown, then carefully flip to cook the other side.
