This tropical fruit salad recipe is only a starting point for a refreshing and nutritious summer treat. You can add all your favorite fruits, including some that are not tropical at all, like blueberries, raspberries, and blackberries.

For me, it has to have watermelon, pineapple, melon, and bananas, since those fruits were always a staple at my grandparents and parents’ homes. That’s why I usually have them on hand.

It’s actually a combination of tropical and non-tropical fruits and I made it with what I had in the fridge. When it comes to creating your own version, you can add mangoes, kiwis, apples, pears, papaya, mandarin oranges, orange slices, peaches, and nectarines. For a special touch, garnish with mint or sweet basil leaves. 

Tips to prevent fruits from oxidizing

Fresh cut bananaSome fruits like bananas, pears and apples, oxidize quite easily. To avoid that, my tip is to put them in separate bowl, and then add fresh lemon or lime juice to the cut fruit. If you think too much acidity will be a turn off for your kids, then cheat a little and add a tablespoon of powdered sugar before mixing these fruits with the rest of the salad. Other friends add a tablespoon of orange juice so the fruits won’t turn brown.

Ingredients

  • 1 cup watermelon, peeled, seeded, and diced
  • 1 cup cantaloupe melon, peeled, seeded, and diced
  • ½ cup honeydew melon, peeled, seeded, and diced
  • ½ cup pineapple, peeled and diced
  • 6 strawberries washed and cut into cubes
  • 12 blueberries
  • 8 raspberries
  • 1 banana, peeled and sliced
  • sprigs of fresh mint to decorate

Instructions

  • Cut up all the ingredients, add to a salad bowl and stir together.
  • Refrigerate covered for at least 30 minutes before serving.
  • Serve and garnish with a sprig of mint.
