Quick and easy guacamole in seconds
My family loves guacamole. Just mixing avocados with lime, cilantro, tomato and onion seems to produce a magical combination that goes well with veggies, chips, and tortillas. You can always tweak recipes using your imagination or simply by trial and error. In my case, I like to add a little garlic but I skip the jalapeños since my kids don’t like spicy foods. So if you enjoy a little heat in your guacamole, this might not be the best recipe for you, but it’s great for those who stay away from stronger spices.
If you have a great blender like a Vitamix, you can make fresh guacamole in just minutes. Here’s a foolproof recipe that everybody will love. I just recently jumped on the Vitamix bandwagon, after giving myself a Mother’s Day gift that my entire family is enjoying. This guacamole recipe has been adapted from the Vitamix cookbook that came with my blender. It’s so easy that it actually takes longer to wash and chop the veggies than the actual guac. I hope you like my version!
Guacamole recipe for blenders
- 2 ripe avocados
- 1 teaspoon of salt
- 3 tablespoons lime juice
- 1 medium tomato (if using a Vitamix you don’t need to peel or cut into small pieces)
- 1/4 cup chopped white onion
- 1 small garlic clove (peeled)
- 1/2 cup of cilantro
- Optional: chopped and seeded jalapeños.
How to make the guacamole:
Place the avocados, salt, lime juice, tomato, onions, garlic and cilantro in the blender. If you use a Vitamix, start by using Variable 1 and then turn it up to Variable 3. Use the tamper to ensure the ingredients keep blending together for 15 to 20 seconds until creamy but still chunky. Serve and garnish with fresh cilantro.
Yields 1 1/2 cups. You can also add jalapeños if you wish but make sure you devein and seed them.
