The Most Delicious Asian Chicken Salad
When you’re tired of the same recipes, this delicious Asian chicken salad comes to the rescue. Not only is it full of flavor, but it is a great main course that you can put together in just minutes.
Since I am always looking for healthy yet easy recipes, this Asian chicken salad recipe is on heavy rotation in my home. I sometimes vary the flavors by adding a tablespoon of honey but if you are watching carbs, no sweetener is necessary.
What chicken should I use for this recipe?
To save time, I recommend using your favorite rotisserie chicken. You may also use grilled chicken strips. Chicken breasts tend to be meatier but can dry out when you overcook them, so just make sure to watch them when you grill them.
Is this Asian chicken salad recipe spicy?
No, this recipe is not spicy at all because I make it for my entire family. However, if you want a little heat, just add a teaspoon of hot chili sauce or sriracha to the salad dressing to give it a nice kick.

Asian Chicken Salad recipe
Serves 4 to 6
Ingredients
- 5 to 6 cups romaine lettuce, coarsely chopped
- ½ cup thinly sliced purple cabbage
- ½ cup julienne sliced carrots
- ½ cup thinly sliced red bell pepper
- 1 cup mandarin oranges, drained well
- 1 cup dry roasted peanuts
- 3 cups rotisserie chicken, sliced or cubed
For the dressing:
- ½ cup olive oil
- ¼ cup creamy peanut butter
- 2 tablespoons soy sauce; I used gluten-free soy sauce
- 1 tablespoon rice wine vinegar
- ½ teaspoon sesame oil
- 1 clove garlic minced or ¼ teaspoon garlic powder
- A pinch crushed red pepper flakes

- In a bowl or jar, mix the ingredients for the dressing until well blended.
- Prepare salads in individual bowls, in a layer trifle bowl, or in a large salad bowl.
