Everything Bagel Seasoning Salmon Sheet Pan Dinner

Ingredients
- 1 pound carrots, peeled and sliced into 1-inch pieces
- 1 tablespoon olive oil, divided
- Salt and black pepper, to taste
- 5 cups broccoli florets
- 4 salmon filets
- ¼ cup Dijon mustard
- 2 tablespoons honey
- 2 tablespoons Everything Bagel seasoning
- 2 teaspoons reduced sodium gluten-free soy sauce, optional
Instructions
- Preheat the oven to 425 degrees F. Prepare a large rimmed baking sheet with nonstick cooking spray or parchment paper.
- Toss the carrots in half of the olive oil and season with salt and black pepper. Place on the baking sheet and cook for 5 minutes.
- Meanwhile, toss the broccoli in the remaining olive oil and season as desired with salt and black pepper.
- Carefully remove the baking sheet from the oven and add the broccoli and salmon to the baking sheet.
- In a small bowl, stir together the mustard and honey. Spread about half of the mixture over the salmon filets. Sprinkle the everything seasoning over the salmon.
- Bake for 12 minutes or until the fish flakes easily.
- Remove the sheet pan from the oven. Mix the soy sauce with the remaining mustard mixture and drizzle over the vegetables. Toss to coat and serve the vegetables with the fish.
