Delicious And Refreshing Popsicle Recipes You Will Love
A frozen popsicle is always welcome during the hot summer months. Kids love frozen pops or “paletas” and they are so easy to make. We found two recipes that we loved because they mix ingredients you probably never thought to include in a popsicle.
Coconut and berries popsicles
Ingredients
- 1 cup low fat coconut milk
- 2 tablespoons chia seeds
- 1/3 cup La Lechera de Nestlé sweetened condensed milk
- 2 cups assorted berries, whole, washed and then pureed or mashed
Instructions
- COMBINE coconut milk and chia seeds in a bowl; Mix well. Allow the mixture to stand at room temperature for about 30 minutes or until the seeds expand, then mix after 15 minutes.
- ADD the sweetened condensed milk. Divide the mixture between 10 frozen pop molds.
- ADD the mashed berries. With the popsicle stick, lightly stir the mixture.
- FREEZE for several hours or overnight.
Lemon pie popsicles
- 2/3 cup La Lechera de Nestlé sweetened condensed milk
- 1 cup low fat coconut milk
- 1 cup fresh lemon juice
- 1 tablespoon lemon zest
- 10 graham crackers, crumbled or crushed
Instructions
- BEAT the sweetened condensed milk, coconut milk, lemon juice and lemon zest in a large bowl until combined.
- POUR about 1/3 cup of the mixture into a frozen popsicle mold.
- INSERT the sticks and freeze for several hours or overnight .
- TO SERVE, remove from the ice pop mold. Roll each popsicle into the crushed cookies so it’s coated in cookie crumbs.
