Zesty Orange Muffins

It’s not just an added ingredient like it is in some blueberry muffin recipes. It’s not a glaze either. As a matter of fact, these muffins don’t have a glaze. Instead, I drizzle these with a perfectly balanced semi-sweet chocolate sauce.
Rather than adding orange flavor to a muffin, I made a muffin that embraces the citrus fruit for its zest and its juice. The whole muffin exudes it’s bright flavor and is balanced with the tangy creaminess of plain Greek yogurt. The result is a breakfast muffin unlike any you’ve ever had, but trust me, every aspect of this baked treat comes together in a perfect blend that you will want to taste over and over again.
These orange muffins make a very nice sweet component to your morning coffee, especially if you are partial to a lighter roast. It’s also a very good midday snack that will boost you up during an afternoon lag. A batch of twelve muffins contains the juice of two whole oranges as well as their zest, and a full cup of Greek yogurt.

Ingredients
- 1 ¾ cups all-purpose flour
- ⅔ cup sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup (1 stick) unsalted butter, melted and cooled
- 1 cup Greek yogurt
- 1 egg
- 2 oranges, zest, and juice
- ½ cup semi-sweet chocolate chips
Instructions
- Preheat oven to 375 degrees F. Prepare a 12-cup muffin pan with cupcake liners. Spritz liners with non-stick cooking spray.
- In a medium bowl, whisk together flour, baking soda, baking powder, salt, and sugar. Set aside.
- In a large mixing bowl, whisk together orange juice, zest, eggs, butter, and yogurt. Stir together wet and dry ingredients until just combined.
- Divide the batter into 12 muffin cups.
- Bake for 18 to 20 minutes until a toothpick inserted in the middle comes out clean. Allow orange muffins to rest in muffin tin for 5 minutes before moving to cooling rack.
- Melt chocolate chips in a microwave-safe bowl, for 20 seconds, stirring well and repeatedly heating at 10-second increments until smooth. Do not overheat. If chocolate is too thick, add ½ teaspoon coconut oil or vegetable shortening.
- Drizzle chocolate over muffins.
