Arroz con leche or rice pudding (8 servings)

Arroz con leche or rice pudding is a yummy milk-based recipeThis rice pudding is inspired by my grandmother’s recipe, but I prepared it with skim milk and I added much less sugar. You can serve it hot at breakfast, or warm or cold for dessert or as a snack.

Ingredients:

  • 1 cup of rice
  • 2 cups of water
  • 8 cups of milk
  • 2 cinnamon sticks
  • Lemon peel
  • 1 cup of sugar
  • ½ teaspoon of salt
  • Cinnamon powder

Instructions:

In a pot, boil the water and cook the rice until the liquid has been almost completely consumed. Add the milk, cinnamon sticks and lemon peel and cook on medium heat for 15 minutes. Add the sugar and cook for 20 more minutes, stirring constantly to avoid burning. Add salt and stir. Remove from heat and discard the lemon peel and cinnamon stick. When serving, sprinkle with cinnamon powder.

Dulce de leche cortada or dulce de leche pudding

This is another recipe from my grandma that is easy and delicious.

  • 1 teaspoon vanilla
  • 1 cinnamon stick
  • 1 cup of sugar
  •  2 lemons, juiced

Instructions:

In a saucepan over medium heat add all the ingredients except the lemon juice. Stir well until the sugar has completely dissolved. Add the lemon juice and cook without stirring until the milk has been cut and lumps are formed. Once the lumps have formed, continue stirring occasionally to avoid sticking to the pan.
