The best thing about this recipe? You can tweak its ingredients according to your preferences. If you’re looking for something extra flavorful (but not too spicy!) try adding some red pepper flakes or Tajín when mixing up all those tasty ingredients.
You can enjoy this dish in as little time as it takes to assemble the ingredients, but you’ll want to make sure that your watermelon cubes are cut small enough before adding them into a large bowl with lemon juice, oil, and mint. I’m so excited to share this recipe because it’s been one of my favorites when we’re in need of something sweet but healthy during these hot summer months! The sweetness from the watermelon pairs perfectly with the saltiness of the feta cheese. Then you add fresh mint leaves which are such an amazing flavor enhancer as well as adding some pretty pops of color on top–it literally screams summertime delight. It also reminds me of Greece, which is not only beautiful, but also has delicious food.
Watermelon Mint Feta Salad Recipe
Ingredients:
- 3 lbs of seedless watermelon, cubed small
- 1 tablespoon lemon juice
- 3 tablespoons olive oil
- ¼ cup fresh mint, roughly chopped
- 4 oz feta cheese, crumbled
- Optional: black pepper, Tajín or red pepper flakes
Instructions:
- In a large bowl combine watermelon, lemon juice, olive oil
- Toss gently
- Add mint and feta and toss again until well combined
- Serve immediately and enjoy!
