  • ⅔ cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

  • ½ cup (1 stick) unsalted butter, melted and cooled
  • 1 cup Greek yogurt
  • 1 egg
  • 2 oranges, zest, and juice
  • ½ cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 375 degrees F. Prepare a 12-cup muffin pan with cupcake liners. Spritz liners with non-stick cooking spray.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, salt, and sugar. Set aside.
  3. In a large mixing bowl, whisk together orange juice, zest, eggs, butter, and yogurt. Stir together wet and dry ingredients until just combined.
  4. Divide the batter into 12 muffin cups.
  5. Bake for 18 to 20 minutes until a toothpick inserted in the middle comes out clean. Allow orange muffins to rest in muffin tin for 5 minutes before moving to cooling rack.
  6. Melt chocolate chips in a microwave-safe bowl, for 20 seconds, stirring well and repeatedly heating at 10-second increments until smooth. Do not overheat. If chocolate is too thick, add ½ teaspoon coconut oil or vegetable shortening.
  7. Drizzle chocolate over muffins.
