Butter Snowballs
During the holiday season, all kinds of sweets appear everywhere you turn. Some of them are undeniably seasonal because they’re made of fresh ingredients like apple or pumpkin. Other treats can easily be made and enjoyed year-round, but they find a home in the winter months. Butter Snowballs enjoy this distinction because of their name, despite the fact that they are not made of snow, or even frozen.
You can certainly make and enjoy this delicious sugary treat any time of year, but their uncanny resemblance to their namesake makes butter snowballs a popular choice especially if you are throwing a holiday party. They are festive looking and easy to eat. Their size makes them an ideal snack, especially since the contents of the snowball include nuts which make them even more satisfying to eat.
Mixed Nuts in Your Butter Snowballs
This recipe calls for either walnuts or pecans. both types of nut are excellent choices. I’m partial to pecans, but either nut works great when finely chopped. The important thing to consider is flavor. Walnuts and pecans have distinctly different tastes. While either nut can be used with superb results, don’t hesitate to make a blend of the two. By mixing pecans and walnuts together you ann find your perfect balance and add nuance to the flavor profile.
Butter Snowballs Advance Prep
I enjoy butter snowballs because they are incredibly easy to make. just mix, chill and roll before baking. The measurements and ingredients are uncomplicated and the bake time is short. The only thing you must be aware of is the amount of time it takes to chill the dough properly. It’s very important that you give it a chance to firm up into the right consistency for rolling. To do this I recommend at least two hours in the refrigerator.
Butter Snowballs
Ingredients:
- 1 C Unsalted butter softened
- 1/2 C Powdered sugar plus more for rolling
- 1/2 TSP Salt
- 1 TSP Vanilla extract or almond extract
- 2 C All purpose flour
- 1 C Finely chopped walnuts or pecans; I use my food processor
Instructions:
- Using an electric mixer, beat together the butter and powdered sugar until creamy.
- Add the salt and almond extract, and beat until incorporated, scraping down the sides of the bowl as needed.
- Add the flour and walnuts and beat on low speed until combined.
- Chill dough in the refrigerator for at least 2 hours, until easy to handle.
- Preheat oven to 350 degrees F. Line baking sheets with parchment paper.
- Roll dough into 1-inch balls and place on prepared baking sheets. Bake for 10-12 minutes, until lightly golden on the bottom.
- Let cool for 5 minutes, then roll warm cookies in powdered sugar.
- Let cookies cool completely and then roll in powdered sugar a second time.
