4 Delicious Milk-Based Recipes For Dairy Lovers
Dairy lovers will love these delicious milk-based recipes. They are also very easy to prepare. In honor of National Milk Day we have four ideas that everybody in your family will enjoy.
4 Milk based Recipes
Arroz con leche or rice pudding (8 servings)
This rice pudding is inspired by my grandmother’s recipe, but I prepared it with skim milk and I added much less sugar. You can serve it hot at breakfast, or warm or cold for dessert or as a snack.
Ingredients:
- 1 cup of rice
- 2 cups of water
- 8 cups of milk
- 2 cinnamon sticks
- Lemon peel
- 1 cup of sugar
- ½ teaspoon of salt
- Cinnamon powder
Instructions:
In a pot, boil the water and cook the rice until the liquid has been almost completely consumed. Add the milk, cinnamon sticks and lemon peel and cook on medium heat for 15 minutes. Add the sugar and cook for 20 more minutes, stirring constantly to avoid burning. Add salt and stir. Remove from heat and discard the lemon peel and cinnamon stick. When serving, sprinkle with cinnamon powder.
Mac and cheese recipe (6-8 servings)
We promise that once you try this macaroni and cheese recipe that it will become your favorite.
Ingredients:
- 1 package of macaroni pasta, al dente
- 2 butter spoons
- 2 tablespoons cornstarch
- 4 cups of milk
- 1 pinch of nutmeg
- Salt
- 4 cups of cheddar cheese
- optional: bacon
Instructions:
In a saucepan over medium heat, melt the butter and add the cornstarch. Stir and cook for 1 minute. Add the milk slowly and cook and stir constantly for about 5 minutes until the béchamel sauce begins to thicken. Add salt and nutmeg and stir. Remove from heat. Add the cheese and stir until melted. In a bowl, mix the pasta with the bacon (optional) and add the cheese sauce. Stir well. Pour into a 10 x 14 inch pan and bake in a preheated oven at 400 ° F for about 15 minutes until evenly browned. Remove from the oven and let cool 10 minutes before serving.
Dulce de leche cortada or dulce de leche pudding
This is another recipe from my grandma that is easy and delicious.
Ingredients:
- 4 cups of milk
- lemon peel
- 1 teaspoon vanilla
- 1 cinnamon stick
- 1 cup of sugar
- 2 lemons, juiced
Instructions:
In a saucepan over medium heat add all the ingredients except the lemon juice. Stir well until the sugar has completely dissolved. Add the lemon juice and cook without stirring until the milk has been cut and lumps are formed. Once the lumps have formed, continue stirring occasionally to avoid sticking to the pan. Continue cooking until the buttermilk is at least three-quarters gone or evaporated. Discard the cinnamon stick and lemon rind, and transfer to a candy bowl. This dessert can be eaten warm, at room temperature or cold.
Venezuelan Hot Chocolate (yields 4 cups)
Although on my blog I have several hot chocolate recipes, this is my favorite and is perfect for winter.
Ingredients:
- 4 cups of milk
- 1 semisweet chocolate bar
- 2 tablespoons cornstarch
- 1 pinch of salt
- 1 teaspoon vanilla extract
Instructions:
In a saucepan over medium heat, add 3 ½ cups of milk and the chocolate, stirring occasionally. In a cup dissolve the cornstarch with the rest of the milk. Once the chocolate has dissolved, reduce the heat to medium-low and add the milk and cornstarch mix , and continue cooking stirring constantly, for 7-8 minutes until the chocolate has the desired thickness. Add the vanilla and salt and stir. Serve hot.
