If you are a home cook, one of the oldest tricks in the book is using up ripe bananas by baking banana bread. As if you don’t already buy bananas specifically for the purpose of making banana bread. Sure, bananas taste great and are high in potassium. Yes, they make excellent components to smoothies, and cereal,; But come on. Banana Bread. Right? I personally love it.
For some people, it’s an afterthought, but either way, it moves bananas and it gives you something to enjoy with your coffee in the morning or an afternoon energy boost.
For me, banana bread is just as exciting a place for experimentation as any other type of food. It isn’t just a way to save bananas before they go bad. You can improve on it. Which is exactly what I’ve done with this maple nut banana bread.
Maple Makes it Taste Better
Is there any food on the planet that isn’t made better by maple? I say no. Even more, maple and banana go so amazingly well together, you’ll kick yourself for not having tried this combination sooner. The distinct sweetness of the maple adds a flavor component to an already bursting flavor profile. It will make you go back for bite after bite until (sad face) the whole loaf is gone before you know it.
This recipe takes about 1-1 1/2 hours to make and it contains 12 servings. You won’t believe how fast it disappears, so my recommendation is to get used to making it and plan to make it often.
Real Maple Syrup
Be advised that this recipe calls for maple syrup. There are lots of pancake syrups that are affordable, but real maple syrup is on the pricey side. Although it is tempting to lower the budget of this recipe by purchasing the cheaper option, I recommend choosing the higher quality for the optimal flavor. Each loaf of maple nut banana bread uses 1/2 cup of maple syrup.
Maple nut banana bread

Ingredients
- 1/2 C unsalted butter (melted)
- 1/2 C maple syrup
- 1 whole egg
- 3 ripe bananas (mashed)
- 1 tsp maple extract
- 3 TBSP whole milk
- 2 C flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/3 C walnuts (chopped)
- 1 TBSP sugar
Equipment
- 5 x 9 inch loaf pan
- 2-Large bowls
- Small mixing bowl
- Scoop
- Cooling rack
Directions
- Preheat oven to 350 degrees F (176 C).
- Prep loaf pan with nonstick baking spray.
- Mix maple syrup with the melted butter in a large bowl.
- Add the egg and bananas. (Make sure to leave some small banana chunks)
- Add in the maple and milk. Stir to mix.
- Mix the flour, baking soda, and baking powder in the other large bowl.
- Slowly add in the banana mixture. Stir until just moistened.
- Scoop the batter into the loaf pan.
- Mix the nuts and sugar in a small bowl.
- Sprinkle the combined nuts and sugar evenly over the bread batter.
- Bake at 350 degrees for 50 minutes.
- Allow to cool slightly in the loaf pan.
- Remove the loaf from the pan.
- Put the slightly cooled loaf on the wire rack to cool completely.
- Once cooled slice.
- Serve.
