Preheat the oven to 425 degrees F or 218 C. Prepare a large rimmed baking sheet with nonstick cooking spray or parchment paper.

In a small bowl, stir together the mustard and honey.

Spread about half of the mixture over the salmon filets.

Toss the carrots in half of the olive oil and season with salt and pepper. Place on baking sheet and cook for 5 minutes.
