FLOURLESS APPLESAUCE CAKE

– 2 1/2 cups unsweetened applesauce – 2 cups sugar – 1 cup vegetable, canola or avocado oil – 4 eggs, room temperature – 6 tablespoons milk – 1 (22 ounce) bag 1 to 1 gluten free flour blend, about 4 cups (I use Bob's Red Mill) – 2 teaspoons baking soda – 1 teaspoon baking powder – 1 teaspoon ground cinnamon – 1/2 teaspoon salt

Ingredients 

Preheat oven to 350 degrees F or 176 C. Prepare a 9x13 baking dish with nonstick cooking spray. In a large bowl, beat together the applesauce, sugar, oil, eggs, and milk until well mixed.

In a larger bowl, whisk together the gluten-free flour blend, baking soda, baking powder, cinnamon, and salt. Add the wet ingredients to the dry ones and beat just until blended.

Transfer the cake batter to the prepared baking dish. Bake the cake for 45 to 55 min or until a toothpick inserted in the middle returns clean.

Make the frosting by adding butter, brown sugar, and salt into a mixing bowl. Beat on high until fluffy, about 6 minutes, scraping down the sides as needed. Add powdered sugar and beat on low. Add milk, scrape down the sides, and continue mixing until the frosting forms. Increase mixer speed and beat until fluffy.

Let the cake cool, then frost  evenly. Cut into squares and enjoy!
