Watermelon salad

  • 6 cups seedless watermelon, cubed (1/2 inch)
  • 1 ½ cups blueberries
  • ¾ cup of cheese, such as feta, goat cheese or mozzarella
  • 2 tablespoons fresh mint
  • Balsamic vinegar, reduced
  1. In a big salad bowl, combine all the ingredients, except the balsamic vinegar reduction. /li>
  2. Cover and chill in the fridge until serving time.
  3. Add the balsamic vinegar reduction right before serving.
