– 2 tablespoons olive oil – 1 lb or 450 grams of chicken breast, cut into bite-sized pieces – 2 tablespoons unsalted butter – 1 cup purple onion, diced – 1 cup chopped tricolor peppers – 2 cloves garlic, minced – 2 cups chicken broth – 1/2 cup milk – 1/2 cup heavy cream – 8 oz bow tie pasta – Salt, to taste – Pepper, to taste – 1/4 – 1/2 cup parmesan cheese – 2 tablespoons fresh parsley, chopped

Step 1.

In a large pan or skillet, heat olive oil and butter over medium heat.Add chicken and cook until no longer pink.

Step 2.

Add in onions and peppers and continue to cook until chicken is fully cooked through and browned.

Step 3.

Stir in garlic, salt and pepper and cook for an additional minute. Add uncooked pasta, milk, cream and chicken broth.

Step 4.

Stir and bring to a boil. Reduce heat to low, cover and simmer for 20 minutes.

Step 5.

Stir in parmesan cheese. If the mixture is too thick, add more milk as needed until desired consistency is reached. Serve and enjoy!
